Sort of simple question, are there any advantages of each? I know Bestial Claws deals with Bleed and Fighting Claws deals with Shredded. Does it mostly come down to aesthetic/theme?

Bestial Claws has a larger number of powers that use bleeds, and Fighting Claws has a smaller number of powers which center around shredded.

Bestial claws as Cris points out, deals far more with Bleeds and ways of using those. Fighting claws, meanwhile, have a modest amount of powers with their own gimmicks. Both of them use Slashing damage, so mixing the two can work out quite well, and the combo of Fighting claws can have an advantage that causes it to apply Poisons, giving it synergy to work with Aspect of the Bestial--hence, making it able to use a Strength-stacking form.
The advantage of bestial claws is simply the access to Bleeds, which is the strongest damage-over-time for most Melee builds. Massacre is also one of the strongest Melee attacks there is, and the advantage to make it stronger encourages Bleed to be on the target.
Fighting claws slacks behind bestial, but it isn't without merit; Tiger's Bite is a strong rupture attack and will take Shredded regardless of what power applied it, Dragon's Claws has an innate +50% Critical Severity so it can make up for builds with a Primary Superstat that don't provide severity (Intelligence, Endurance, etc), Rend and Tear is the only power that can fully refresh Shredded on tap (most others will only refresh 10 seconds and cost advantage points to do so), Viper's Fangs is an incredibly fast combo and can provide Setup quicker than most while applying Shredded without the need to spend advantage points, and has the aforementioned ability to apply poisons.
The other thing about fighting claws is that... well, the four powers I mentioned above, are the only fighting claws powers in general. Everything else in the frame is universal Martial Arts powers, so fighting claws kind of lacks identity.

This was extremely helpful and answered a lot of questions I didn't think to ask yet. Without considering theme, would mixing the two (bleeds & shredded) be a worthy investment or is it just better to focus on one?

Mixing Bleed and Shredded is definitely a good mix. Since Bleed deals Slashing damage, you'd not only be buffing the damage of your main attack, but also the damage-over-time you're doing. A good example of this sort of combo is using Shred (the power) with the Penetrating Strikes advantage, then using Tiger's Bite to rupture the Shredded debuff it applies with the Setup buff from Brawler specialization, utilizing Aspect of the Bestial to guarantee Bleed stacks.
That is just one example of it, there's a few different ways you can mix the two, but the above is one of the easiest ways.
