I'm lvl 39 now, but felt that somehow I miss out on Haymaker. At 32 I spent a hour testing haymaker vs uppercut.
It seems that you can spam tap uppercut continuously, while haymaker taps can't be spam continuously, it needs a normal hits in between, even if you have adequate energy.
While the first uppercut tap dmg may be low, but I noticed after a couple later, the dmg is nearly as high as haymaker tap.
The uppercut knocks up which makes it easier to fight mobs in pve, rather than chasing after them using haymaker. It has better dmg per energy so tanking is easier. I spam uppercut rather than defensive combo and keep aggro easier believe it or not.
I don't know about pvp since I didn't pvp since lvl 20.
So far this is what I tested, what can the veterans tell me about which one is better? Am I missing out on haymaker?

The uppercut damage being increased to near-haymaker levels is a result of Might attacks with knockback doing increased damage VS knock immune foes. Uppercut knocks on tap, so after a few taps, you've made your enemy knock immune and thus it ramps up its damage. Haymaker also gets this benefit, but it does not knock on tap so it will generally only get the bonus against bosses (who are immune innately).
For PVE, I prefer Uppercut as my general purpose. It's quickly and easily usable, doesn't require chasing, and isn't as taxing on my energy bar. Haymaker has higher burst, though, and the long distance knock will put someone out of commission for longer than the knock up -- if it doesn't kill them. In addition, in PVP Haymaker has an advantage called Nullifying Punch that is extremely useful in killing anyone that can heal themselves.
Personally, I'd stick with Uppercut. Haymaker is still great, but forced to choose, that's where I'd choose.

I vote Haymaker, purely for the fact that it has Nullifying Punch. That is a massive tactical advantage in PvP.

I do advocate both for Freeform, but that's not really a possibility for him. :x Uppercut spam tapping can keep someone grounded for a good while in PVP, but yes, fighting anyone that can heal even decently will make you yearn for Nullifying Punch.
